Ingredients
1 cup uncooked long grain white rice
6 cups water
Zest from one lemon
1 cinnamon stick
2 cups whole milk
1 can sweetened condensed milk, (14 ounces)
1 can evaporated milk
1/4 teaspoon salt
1 teaspoon vanilla extract
Ground cinnamon for garnish
Instructions
In a saucepan, add the rice with water, lemon zest and cinnamon stick. Cook until the rice is soft, about 15-20 minutes.
Remove the cinnamon stick and drain off any excess water. (Most of the water should be absorbed into the rice.) Place saucepan back on the stove.
Add milks, condensed milk, salt, and vanilla extract to rice and cook over low heat, uncovered, stirring occasionally until thick, for about 30 min to 1 hour.
Remove from heat, let it get room temp (unless you like warm rice pudding), and refrigerate it. Serve, sprinkle with ground cinnamon and enjoy.
TIPS AND TRICKS
Use wood spoon to move your rice.
Refrigerate overnight for better taste.

Creamy vegan rice pudding that tastes like a delicious custard! Divine served with a sprinkle of cinnamon either hot or cold.
INGREDIENTS
3/4 cup (150g) Basmati Rice (Dry Weight)
4 14oz (400ml) Cans Coconut Milk (Total 1600ml)*
1 cup (240ml) Water
1/4 cup (50g) White Sugar
1/4 cup (50g) Brown Sugar
1/2 tsp Salt
1/2 tsp Vanilla Extract
2 Tbsp (30g) Vegan Butter
For Serving:
Sprinkle of Cinnamon
INSTRUCTIONS
Add the basmati rice, coconut milk, water, white sugar, brown sugar and salt to a large pot and bring to the boil stirring regularly.
Turn the heat right down so that it is on a slow simmer, cover the pot and let it cook for around 50 mins, stirring at regular intervals, until it is the consistency of a thick, creamy custard.
Stir in the vanilla extract and vegan butter and serve either hot or cold with a sprinkle of ground cinnamon.
